Just before Christmas I watched Rick Stein on TV preparing a majestic salmon, sandwiching deconstructed salsa verde with the boned and trimmed fillets. He laid the herby fish bundle on a bed of sliced tomatoes and roasted it long enough to soften the tomatoes but leave the fish perfectly moist.
